    What’s on Your Labor Day Menu?

    Anybody grillin’?

    We’re opting for some Roast Beef Po Boys with Debris. Just whipped up some creole mayonnaise and shredded cabbage. Beef is well seasoned and is on for a long slow braise. Later today I’ll fix some Buttermilk Mac and Cheese.

    Winterizing the RV. Snow tonight is a welcome climate change, as we all hope it suppresses the 7000 acre fire burning in the exurbs just outside of town.

    Just hamburgers and hot dogs. Plain folk stuff.

    I should add bratwurst and beer. Like I said, plain folk stuff. Probably Yuengling Lager.

    Pretty simple. Boil a box of mac for 2/3 the recommended time. Meanwhile melt 2T of butter. Blend it with 2 1/2 cups of buttermilk, and 6 eggs. Add 2 1/2 to 3 cups of cheese. Add a touch of salt, cayenne. Add some worchestershire sauce and Tabasco If you like. For a lagniappe I’ll throw in some cooked bacon or a minced jalapeño.

    Throw it all in a 9x13 baking dish and bake it at 350 degrees for 50 minutes. It will rise up to almost a souffle type texture. Corners should be brown and crusty. Inside will be creamy.

    This is a good alternative to making a roux. I had some leftover buttermilk from making cornbread last week and needed to use the rest before the expiration.

    Who has 'leftover' buttermilk? All mine goes straight down my gullett.
    I like the sound of the recipe, Mick.

    We are having T-Bones, Baked potato, sweet potato for Grammy, Salad and a quick spin in the old pool. Nothing too fancy or outrageous.

    I had some leftover buttermilk from making cornbread last week and needed to use the rest before the expiration.
    Cast iron skillet or baking pan?
    Sugar or no sugar?
    White sugar, brown sugar, or honey?
    White or yellow corn meal?
    Stone ground or regular corn meal?
    Do you add sweet corn, bacon bits, chopped jalapeno peppers?
    Baking powder, or baking soda?
    All purpose flour or self rising?

    I only use Weisenberger, milled in Woodford County.

    Has to be in a cast iron skillet.

    I use a couple of drops of honey. I try to stay away from refined sugar.

    Yellow cornmeal

    Add bacon, corn and jalepenos, one two or all three.

    Weisenberger also has great spoonbread.

    I use Weisenberger also if I’m out of the calico cornmeal I get back in Morgan Co. Iron skillet and buttermilk, make sure to preheat the skillet with a little peanut oil so you get that nice crispy bottom.

    I gotta try the Mac and cheese.

    1/2 Handful of flour. Two handfuls sunflower white corn meal mix, egg, some oil and then buttermilk to pourable consistency. Little bit of Oil in cast iron skillet heated to 425. Pour batter in bake till Done. I like it a bit darker. If you have leftoverbatterpoir into cornstick pans.

    My mother was born and raised in Peoria IL and when she and Dad moved back to
    God's country she had to learn how to cook biscuits and cornbread. My Dad's mom volunteered to teach her the ropes and she learned cornbread really well, but it had to have brown sugar in it or she did not like it at all. As for biscuits, she could never remember to get White Lily flour which meant her biscuits were always flat and heavy.

    Is their cornbread mix a mix of corn and flour and baking powder? I use self-rising corn meal, including Weisenberger mill's, wonder what may be the difference.

    Yes. If you use the mix, you only need add eggs and oil.

    Normally take the time to grill out, but was pretty busy today with farm work and cleaning out my basement. Mom grilled frozen burgers and hot dogs today. In-laws did similar yesterday. No all out meal this year.

    Normally I don't even add flour to my cornbread. I like it with just the meal, but I may try their mix. I'm a cornbread minimalist usually. Will throw in jalapenos from time to time.

    We went to the TRUMP FLOTILLA in Jupiter. Boats went from there to his WBP house. Not sure how many boats, but it was a boatload or boats






    Somebody said there were some flags on this bridge, but I didn't notice

    as for my "meal"...stuffed peppers, no grillin for me

    I am late to this party.

    Grilled Burgers and Dogs on Saturday evening.

    Then, after my shellacking on the golf course yesterday morning I came home and rubbed down some ribs and smoked them 3-2-1 style for a wonder dinner. best ribs I have made in a while. Had to be careful taking them off smoker they were falling off the bone! Add some fresh sweet corn and a baked potato and we had our Labor Day Feast.
