I'm going to be hit or miss the next couple of days, and there's a possibility I may have a moment to look more carefully--and if I do, I will prominently EDIT this post before deadlines.

But in the meantime, to make sure I have a pick in this week, I'm choosing--

Wyoming

Honestly Southern Miss doesn't seem like a bad pick :-( but I'm not picking it.

I feel like I should be different but I think Wyoming is the next best on the board so I'm going with it.

You and I are in lockstep with each other. I wasn't going to pick USM, but yeah, that 7 points caught my attention. I *think* UK will win, but good chance in my mind they won't, too.

I was listening to the Shutdown Fullcast, by the SBNation guys. I can't remember if it was the episode where they discussed us or another one, but they were referring to someone's season opener by saying "They're a good mid-major. You don't play those. You just don't do it. Nothing good can happen". And yeah, that's kind of how I feel. I think maybe USM was hot trash back when we originally scheduled the contract though, so what do you do?

That and both teams have so many unknowns. Sure we should be better, but they have a great quarterback and a lot of returning starters and we have some questions on the front 7. I think we win but there's too many questions to feel sure. So a number as high as 7 starts looking like an attractive bet. And for that matter USM might falter adjusting to a new coach and a... uh... less than proven OC. You just don't know.
